  • Quick & Creamy Bean Spread

    It’s great to have something creamy and delicious to spread on sandwiches, quinoa waffles, slices of Manna bread and crackers. This spread is so quick to make and tastes amazing.

  • Manna Bread

    Once in awhile I come across a product that is so delicious that I have to tell the world!

    What is Manna bread? It is a cake-like, sprouted bread, yeast free bread, organic bread, free of salt, no oils, no sweeteners, no leavening agents. Manna is a moist and delicious, high in protein and fiber.You’ll find it in the freezer section of your natural foods store. Stock up, because it’s easy to go through these little loaves quickly.

    Though it’s small, one loaf of Manna bread is perfect for my family of 4 for dinner. I pull one out of the freezer about an hour before dinner, throw it on the counter and let it defrost. About 10 minutes before dinner I open it up, slice it in half the long way, then spread a bit of EarthBalance on each cut side. Then into the toaster oven it goes for 10 minutes until the EarthBalance melts and it is warm and moist on the inside, and toasty on the outside.

  • Crispy Ginger Tofu with Orange Sauce

    Adapted from Alicia Silverstone’s recipe in The Kind Diet, this is a great way to take plain old baked tofu and to turn it into something special. Throw it onto a pile of brown rice with a side of veggies, use it in a sandwich, or toss it into your salad.

  • Green Smoothie in Paradise

    B and the kids and I have been relaxing on Maui for the past few days, and I decided to take a break from the fun to share a new green smoothie recipe. While on vacation I loosen up on my diet and enjoy some of the treats that are off limits at home — that being said, I still make a point to get my greens everyday. The easiest way to get greens is of course with a green smoothie. We are staying in a condo that has a fully equipped kitchen (yippie!) including a blender. While it is no Vita-Mix, with a few modifications to my Green Smoothie 2.0 recipe I was able to make it work.

  • Favorite Spinach Salad

    You’d never know by tasting this salad that it contains no added oil. While balsamic raspberry blush vinegar lends amazing flavor to this already bursting salad.

  • Classic Vegan Burrito

    If you thought burritos were only good when loaded with meat and cheese, then you’ve got to try this recipe! Sprouted grain tortilla spread with a light hummus and then stuffed with baked tofu and crunchy veggies….yummmm. You’ll find the sprouted grain tortillas in the freezer section of any natural foods store (Ezekiel brand).

  • Tender Summer Squash

    Here’s another option when it comes to summer squash. This year my garden has been taken over by zucchini and yellow squash, so this recipe has come in handy!

    Quinoa is always a great addition to a nutritious meal. I consider it my protein-rich go-to grain (even though it is technically a seed). This recipe is quick and is a great way to use fresh-from-the-garden basil.

  • Peach (or Mango) Sorbet in a Flash

    There is something about ice cream that simply makes my kids go crazy.

    At about 4pm every afternoon an ice cream truck drives down the main road behind the back wall of our property, playing a catching tune over loud speakers. As it so happens the kids and I are almost always out back at that time, with me in the garden and the kids in their sandbox. My kids have never gotten ice cream from an ice cream truck. They can’t even see the darn thing since our back wall is so high. But it never fails, whenever that truck passes by they both start screaming for ice cream.

    This quick and nutritious fruit sorbet recipe comes in handy at times like those!

  • Red Quinoa & Falafel Dinner (Gluten Free)

    This dish is perfect for a nutritious summer dinner. I found the red quinoa at Trader Joe’s and the falafels at Costco. Serve it up with a heaping spoonful of hummus.

  • Creamy Summer Pudding

    My kids love dessert, and there is nothing like the promise of a sweet treat to get even the most stubborn child to eat their veggies. The cool thing about kids (especially young ones) is that they will get excited about anything that you create when you call it dessert. Of course they want it to taste delicious and you want it to be nutritious, so this summer pudding is the perfect compromise. Made with butternut squash, a dash of sucanat and cinnamon and topped with bananas, this pudding is a total win-win.

    When the kids are hungry and you’ve no plans for dinner, simply throw this pasta dish together rather than heading for a drive thru. You won’t miss the sauce with this made-in-a-flash dish. The fresh veggies coupled with ground salt and pepper add delicious flavor. My kids can’t get enough of this stuff.

    I started making this smoothie every morning for breakfast after reading chapter 3 of Victoria Boutenko’s book ‘12 Steps to Raw Foods — How to end your dependency on cooked food’. Boy, does she have some strong points as to why we should all consume a large helping of greens every day.

    This is a great dressing to liven up your salad or lettuce wraps!

    Sometimes soup should be cold and refreshing, rather than hot and comforting. Avocado makes this soup amazingly creamy, and the salsa adds a nice kick of flavor.

    As much as I love sprouted grain buns, there are just some days that lighter is better. This is a fun way to prepare veggie burgers.

  • Black Eyed Peas Medley

    I love recipes that are packed with vegetables that my kids will eat. This is one such recipe. Tender black eyed peas are served in a veggie medley over brown rice and then topped with chopped avocado, sunchokes and green heirloom tomatoes — delicious!

    I’ve pretty much lived off of veggie burgers since I became a vegetarian at age 12. Since experimenting with the raw diet, veggie patties are the number one thing that I’ve missed. This recipe is fantastic – these patties really satisfy. If you aren’t on a raw diet, feel free to grill these in a pan.

  • Amazing Raw Cheese Spread

    If you love the nutty, cheesy taste of nutritional yeast, then this is definitely the recipe for you. Soaked pine nuts create a wonderful creamy consistency that tastes surprisingly like cheddar cheese. Spread this on your sandwich, dollop it on your lettuce wraps or use it as a tasty dip.
